This fluffy yogurt cake uses just a few basic ingredients: eggs, Greek yogurt, sugar, flour, and baking powder. The result? A light, cloud-like texture that melts in your mouth. No butter or oil needed—perfect for a simple, satisfying dessert or snack.
Ingredients
- 4 large eggs, separated into yolks and whites
- 120g sugar, divided (80g for egg whites, 40g for yolks)
- 1 cup (250g) plain Greek yogurt
- 100g all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
Instructions
Step 1: Preheat your oven to 340°F (170°C). Line a round 8-inch cake pan with parchment paper and lightly grease it.
Step 2: In a clean bowl, beat the 4 egg whites with 80g sugar and the salt until stiff peaks form. Set aside.
Step 3: In a separate bowl, whisk the 4 egg yolks with the remaining 40g sugar until pale and creamy. Add the Greek yogurt and mix until smooth.
Step 4: Sift in the flour and baking powder, and stir until fully combined.
Step 5: Gently fold the whipped egg whites into the batter in three additions, being careful not to deflate the mixture.
Step 6: Pour the batter into the prepared cake pan and smooth the top. Tap the pan gently on the counter to release air bubbles.
Step 7: Bake for 30–35 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
Step 8: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
