Light and Fluffy Japanese Cheesecake
This Japanese Cheesecake is a heavenly combination of classic cheesecake and sponge cake. It’s soft, airy, and melts in your mouth, thanks to the whipped egg whites and cream cheese base. A delightful dessert that’s perfect for any occasion.
Ingredients
- 8 oz (225g) cream cheese, softened
- 4 tablespoons unsalted butter
- 6 large egg yolks
- ⅓ cup granulated sugar
- ½ cup all-purpose flour
- 1½ tablespoons cornstarch
- ¼ cup heavy cream
- 1 tablespoon lemon zest
Instructions
Step 1: Preheat oven to 320°F (160°C). Line the bottom and sides of a round 8-inch springform pan with parchment paper. Wrap the outside of the pan with foil to prevent water from seeping in during the water bath.
Step 2: In a large bowl, melt the cream cheese and butter together over a double boiler or in short bursts in the microwave until smooth. Let cool slightly.
Step 3: Add the egg yolks, sugar, flour, cornstarch, heavy cream, and lemon zest to the cream cheese mixture. Whisk until well combined and smooth.
Step 4: In a separate clean bowl, beat 6 egg whites with a pinch of salt and additional sugar (about ¼ cup) until stiff peaks form.
Step 5: Gently fold the egg white meringue into the cream cheese mixture in batches. Use a spatula and fold carefully to avoid deflating the mixture.
Step 6: Pour the batter into the prepared pan. Place the pan in a larger baking dish filled with about 1 inch of hot water (a water bath).
Step 7: Bake for 60–70 minutes, or until the top is golden and the center is set with a slight jiggle.
Step 8: Turn off the oven and leave the cake inside with the door slightly open for 15–20 minutes to prevent collapsing.
Step 9: Remove the cheesecake from the oven, let cool completely at room temperature, then chill in the refrigerator for at least 2 hours before serving.
Serving Tip
Dust the top with powdered sugar and serve with fresh berries or whipped cream for an extra treat.
